Salsify (Tragopogon porrifolius), also called oyster plant or vegetable oyster, produces long, tapered roots with cream-colored flesh that develops a distinctive flavor resembling oysters when cooked. This forgotten vegetable was once a staple in European gardens but has become increasingly rare, making it a valuable specialty crop.

The plant's grass-like foliage and purple flowers (if allowed to bloom) add ornamental value, though most growers focus on root production. In hydroponic systems, salsify benefits from the deep, loose conditions that allow its long roots to develop properly.
